Sausage

Ingredients

4 lbshamburger
1/4 cupcuring salt
1 Tbspgarlic salt
1 Tbsponion salt
1 1/2 tsppepper
1 tspliquid smoke
1 tspmustard seed

Directions

  1. Mix all ingredients together. Chill for 24 hours, kneading every 8 hours.
  2. Divide into 4 parts and shape into logs. Place on broiler pan and put in oven on bottom rack for 1 1/2 hours. Turn oven down to 150 and continue cooking for 6 1/2 hours longer.
  3. Cool and slice.
