Pumpkin Pecan Pancakes


1 cupmilk
1/3 cuppureed pumpkin
2 Tbspmelted butter
1/4 cupcrushed pecans
1 1/4 cupflour
2 Tbspsugar
2 tspbaking powder
1/2 tspcinnamon
1/8 tspnutmeg


  1. In a large bowl, stir together milk, pumpkin, butter and egg.
  2. In another bowl, mix all dry ingredients together. Add dry ingredients to liquid ingredients.
  3. In a hot skillet with small amount of butter, pour batter into desired size of pancake. Cook approx. 3 minutes per side.
