Hash Brown Omelette


6 slicesbacon, diced
3 cupsfrozen hash browns
1/2 cupchopped green pepper
1/3 cuponion relish
1/4 cupmilk
salt, to taste
pepper, to taste
1 cupshredded cheddar cheese


  1. In large skillet, cook bacon until desired crispness. Remove from skillet and drain. Remove all but 2 Tbsp bacon drippings from skillet.
  2. Add hash browns and cook until heated through, stirring occasionally. Add green pepper and oinion relish. Cover and cook on medium heat another 10 minutes until heated through and underside begins to brown.
  3. Beat eggs and milk together. Season with salt and pepper. Stir in bacon and cheese. Pour evenly over hash browns and help mixture to seep through using spatula.
  4. Cover and cook on low heat 8 - 10 minutes or until eggs are set and cheese is melted.
  5. Loosen edges and cut into wedges.


  1. 1/2 cup chopped ham may be used instead of bacon. Chopped onion can be used instead of onion relish.
