Chicken Quesadillas



1 Tbspoil
1onion, chopped
1garlic clove, minced
1jalapeno pepper
1/4 tspchili powder
1-28 oz canwhole peeled tomatoes, pureed
1 tsplime juice
salt & pepperto taste
86" tortillas
12 ozshredded cooked chicken
4 cupsmonterey jack cheese, shredded
2 Tbsppickled jalapenos
1/2 cupwater


  1. Saute onion, garlic and pepper in oil. Sprinkle with chili powder.
  2. Pour in tomatoes and cook until onion is soft. Add lime juice, water, salt and pepper.
  3. Place tortilla on flat surface. Add chicken, cheese and pickled jalapeno.
  4. Roll tightly and place in 9 x 13 pan.
  5. Pour sauce over wrapped tortillas and sprinkle with cheese.
  6. Bake 5 - 7 minutes.
