Chicken Quesadillas
Ingredients
| 1 Tbsp | oil |
| 1 | onion, chopped |
| 1 | garlic clove, minced |
| 1 | jalapeno pepper |
| 1/4 tsp | chili powder |
| 1-28 oz can | whole peeled tomatoes, pureed |
| 1 tsp | lime juice |
| salt & pepper | to taste |
| 8 | 6" tortillas |
| 12 oz | shredded cooked chicken |
| 4 cups | monterey jack cheese, shredded |
| 2 Tbsp | pickled jalapenos |
| 1/2 cup | water |
Directions
- Saute onion, garlic and pepper in oil. Sprinkle with chili powder.
- Pour in tomatoes and cook until onion is soft. Add lime juice, water, salt and pepper.
- Place tortilla on flat surface. Add chicken, cheese and pickled jalapeno.
- Roll tightly and place in 9 x 13 pan.
- Pour sauce over wrapped tortillas and sprinkle with cheese.
- Bake 5 - 7 minutes.
