Carrot & Pineapple Muffins

Ingredients

2eggs
3/4 cupvegetable oil
1 cupsugar
1 tspvanilla
1 cupflour
1/2 tspbaking soda
1/2 tspsalt
1 tspbaking powder
1/4 tspcinnamon
1 cupcarrots, grated
1/4 cupcrushed pineapple w/juice
1/4 cupchopped nuts

Directions

  1. In a large bowl mix eggs, oil, sugar and vanilla together.
  2. In another bowl blend together flour, baking soda, salt, baking powder and cinnamon. Add to egg mixture.
  3. Gently stir in carrots and pineapple until just blended.
  4. Fill muffin cups two thirds full.
  5. Bake for 25 minutes.
